Aalu Baingan

Another of the quick fix for the morning is my all time fav, Aalu Baingan.

My mom makes it with Kasuri methi and amchoor [Dry mango powder] delectable is the word.

  • 3 brinjals ... . Medium size [ Cut length wise in batons
  • 2 Potatoes ... . Medium Size [ Cut length wise in batons
  • 1.. Tbsp Oil .
  • 1 Tsp Jeers .. .
  • pinch of . a scant hing
  • 1/2 tsp Turmeric .. .
  • 1 Tsp Chilly Red powder ... .
  • Salt .
  • 1/2 Tbsp Dhaniya powder ....
  • 1/2 Tbsp Amchoor powder ... .
  • Water .

Instructions
  1. Put oil in a wok and let it heat.
  2. Add the jeera and hing to it.
  3. Once jeera is brown, add haldi, salt and chilly powder.
  4. Put the veggies in the wok and add enough water to soak them half.
  5. Cover with a lid and cook on medium flame until the veggies are soft.
  6. heat the kasuri methi briefly on the tava and and keep aside.
  7. Remove the lid, once they are soft.
  8. Let the water evaporate.
  9. Add the amchoor, methi and Dhaniya powder. Stir.
  10. Turn off the gas and cover it.
  11. Pack it for lunch with bhakri/chapati/paratha.
