Creamy lentils with Mashed potatoes, Citrus Salad and Toasted Bun

I have been meaning to my version of Creamy Lentils with Mashed Potatoes, which I found here, for a very long time now.

I am a huge fan of lentils and sabut masoor is one of my favourite.

Ingredients
  • Lentils For Creamy
  • Pre Soaked and cooked Sabut Masoor
  • 1 Onion . Medium Size [ Finely chopped
  • 1 Tomato Medium Size [ Finely chopped
  • 200 Ml Cream fresh cream [ I used Amul
  • 3 - 4 Chillies Red [ Finely chopped
  • 3 Pods chopped garlic Finely
Ginger [Finely chipped 1 inch.
For the salad:
  • 1 bag Mixed Salad Leaves
  • 1 orange Medium sized [Make segments from half of the and get the juice out of the other half]
  • 1/2 orange Zest of an
  • 12 - 15 Cherry tomatoes . Roasted
  • to taste Pepper
  • to taste Salt
  • 1 Tbsp Olive Oil
  • walnuts Fist ful of roasted [Optional]

Instructions
  1. Put the butter in a heated pan and add the ginger, garlic and chillies. Saute for a min.
  2. Add the onions and cook till they turn translucent.
  3. Add the tomatoes and a dash of water, cover and let it cook till tomatoes reduce.
  4. Add pre cooked lentils, salt and pepper and about 1 cup water.
  5. Let it simmer until the water reduces.
  6. Add the cream and keep the lid on, on a low-medium heat.
  7. Stir ocassionally.
  8. Cook until the lentils are almost dry.
  9. For Citrus Salad:
  10. Mix all the ingredients just before serving
  11. For Mashed Potatoes:
  12. I used a very simple classic recipe from here
  13. For bun:
  14. Halved the burgen buns and put it to toast in the oven at 200 degrees for 5-7 min.
