Ingredients
For Paneer:
  • 1 Milk . L
  • 1 Tbsp vinegar lemon Fruit / juice of 1 .
  • Sandwich Filling :
  • 1 capsicum . roasted [ Medium , cut length wise
  • 1 onion . [ Medium , thin slices
  • 200 gms paneer About [ Fresh or store - bought , crumbled .
  • 1 Tbsp Hung Curd Mayo thousand island [ Or or .
  • 1 Tbsp Cheese cheese Spread [ grated processed .
  • 1 Tbsp oregano .
  • 1 Tbsp Chilly flakes [ Adjust qty when cooking for kids .
  • to taste Salt pepper . and
  • bread BrownWhite /.
  • Butter .
  • 1 Tbsp oil .

Instructions
  1. To make paneer:
  2. Bring milk to boil,
  3. Add the vinegar/lemon juice.
  4. Wait till it curdles.
  5. Strain in a cheese cloth [Mulmal.
  6. Hang for a few min to allow water to seep out.
  7. Since this had to go in the sandwich, I hung it for only a couple of min. I did not want it to be all dry.
  8. Filling:
  9. Heat oil in a pan.
  10. Add the onion and capsicum.
  11. Let them sweat a little [do not over cook.
  12. Add the flakes, salt, pepper, oregano and paneer.
  13. stir for a couple of min then take out in a bowl and let it cool for a few min.
  14. Once cooled, add hung curd/mayo and cheese spread.
  15. Put butter on one slice of the bread and add the stuffing on top. Cover with another slice and put in the sandwich maker.
