Meatless Metaballs with Maggi

7 Days with Instant Noodles- Day # 1.

Apologies for not writing on soon. Got stuck up with a flooded house to a no water in the house. Dont ask…crazy week. Anyway, I did manage to make a successful dish with Maggi.

Meat-less Meatballs with Tomato and corriander Sauce: I saw this on TV in a David Rocco Show. Loved the concept, hence giving it a go.

To make it meatless I used Eggplant.

To sum up there are 3 components of the Dish:

No Meat Meatballs.

Noodles.

Tomato Sauce.

Ingredients
  • 1 Eggplant Medium Size
  • 1 Carrot Medium [ Finely grated
  • Half of 3 peppers . [Red, Green and Yellow] Finely chopped
  • 3 - 4 Spring Onions .. with greens
  • 1/4 cup Bread crumbs .
  • to taste Salt pepper . and
  • 1 tbsp Red chilli flakes [ DH and I love the heat , you may adjust as you like it
  • 1 Egg
  • Oil to shallow fry .
  • Noodles To Make :
  • You need
  • Noodles Wheat noodles Any Instant , I used from Maggi .
  • Sauce To make :
  • 3 Tomatoes Medium Size
  • 2 Cups water Boiling
  • 1 Tspn Basil
  • to taste Salt pepper and
  • 2 Tbsps Corriander Chopped
  • 1 Tbsp sauce Hot and Sweet [You may add little tomato ketchup and tobasco]
  • 8 - 10 cherry tomatoes Chopped
  • 2 Tsps oil

Instructions
  1. Cut eggplant in small pieces and put in boiling water until they are cooked and mashable
  2. Mash the eggplant and cool.
  3. Add the peppers, carrot, Spring onion, spices, bread crumbs and Egg/flour.
  4. Mix well.
  5. Take a pan, heat and add oil.
  6. Make small flattened balls and put on the pan.
  7. Cook until little charred [We like them that way, however you may remove them when they are golden brown.
  8. Take them out on a kitchen towel and rest.
  9. To Make Noodles:
  10. Boil the water and add the Noodles.
  11. Cook until done.
  12. Wash in fresh water to stop the cooking process.
  13. To make Sauce:
  14. Boil water and add the tomatoes. Cover and cook until the skin tears.
  15. Let it cook [Do not throw the water.
  16. Peel the skin and add to the water in which they were cooked.
  17. Puree it [I used hand blender, please be free to use a mixer.
  18. In a pan, put oil, add the puree cook for few min.
  19. Add the salt and pepper, basil, Sauce and Cherry tomatoes.
  20. Cook until the cherry tomatoes are a little cooked and oil floats on top.
  21. To Assemble:
  22. Put the Noodles in the sauce and give it a little toss.
  23. Put it on the plate to serve and add the eggplant ball to the noodles and put a little sauce from the pan and put over them.
  24. Serve hot.
