Slow Cooked Jeera Aalu/potato stir fry

Jeera Aalu is supposed to a Dhaba comfort food. Low maintenance, super easy to put together and hardly anything can go wring with this one. The version I love, has crispy edges and a pillow-y center. Oh it is to die for.

Ingredients
  • 3 Potatoes medium Size (Washed, peeled and cut in equal size pieces)
  • 2 green chillies (Slit in the center)
  • 2 tsps Oil .
  • 1 tsps Jeera Cumin seeds / .
  • 2 tsps Dhaniya coriander powder / powder .
  • 2 tsps Jeera cumin powder / roaster powder .
  • 1 tsp Amchoor mango Powder powder / Dry (Optional)
  • to taste Salt .

Instructions
  1. In a Kadhai/wok, heat the oil.
  2. Add the cumin seeds and green chillies.
  3. Reduce the heat for medium-low.
  4. Drain the potatoes well and wipe them with a kitchen towel/cloth. We dont want much moisture on it.
  5. Add them to the wok.
  6. Keep stirring until all the potatoes are covered with oil.
  7. Let it cook for about 30 min, stirring occasionally.
  8. Add the masalas and salt. mix well.
  9. Now let it cook for 20 more min, so that the potatoes are cooked through and have a crispy exterior.
  10. Serve with love.
