Spicy Ginger-Basil and carrot Soup

Another no brainer soup at the end of a long tiring day.

I served this one with a cheat’s burger 😀 And the pati slurped his share and mine too.

  • 2 tomatoes ... . Medium size [ cut in chunks
  • 1 onion ... small . [ Cut finely
  • 15 - 20 basil ... . leaves
  • 1 inch Ginger [ grated ... .
  • to taste Salt . [
  • to taste pepper . [
  • to taste . tobasco [
  • butter A dollop of .
  • drops olive oil of . few
  • 3 - 1/2 cups water boiling .

  • 3 - 1/2 cups water boiling .
Instructions
  1. In a pressure cooker, add few drops of olive oil and add the carrot and onion.
  2. Let them brown the onion sweat.
  3. Add the tomatoes and ginger and cook until tomatoes are slightly soft.
  4. Add boiling water.
  5. Let the water water simmer with the veggies for a while.
  6. Pressure cook upto 4 whistles.
  7. Once the steam escapes, open the put the soup on a medium flame to simmer.
  8. Use a hand blender to pulse the veggies in the soup.
  9. Add the butter dollop and seasonings to taste.
  10. The soup needs to reduce to about 3/4th.
  11. Strain through a muslin cloth.
  12. Put it the soup on the gas again. Add the basil leaf chunks and bring to boil once.
  13. Remove them before serving.
  14. Serve with bread/burger of your choice.
