Stuffed Cucumbers

Aah this lovely refreshing dish was a part of the urban picnic that I hosted for the husband and me on the eve of our first anniversary 🙂

Ingredients
  • 1 cup Red Peppers Roasted . ...
  • 1/2 cup cheese Processed [ grated . ..
  • 2 tbsps Flour . ...
  • Salt pepper . and
  • 2 cucumbers . [ Sliced , peeled , halfed and hollowed leaving a thin base

Prep Time 20 minutes

  • 1 cup Red Peppers Roasted . ...
  • 1/2 cup cheese Processed [ grated . ..
  • 2 tbsps Flour . ...
  • Salt pepper . and
  • 2 cucumbers . [ Sliced , peeled , halfed and hollowed leaving a thin base
Instructions
  1. Puree the roasted peppers and put them in a pan with about 2-3 drops of oil.
  2. Add the cheese and flour.
  3. Cook for 3-4 min or until the mix becomes dry-ish.
  4. Season it and taste.
  5. Let it cool completely.
  6. Now using a piping bag, fill the stuffing in the cucumbers.
  7. Place a cheese shard on top and serve with love.
